If you’re like me, you can’t get enough of chia seed pudding! Now, if you’re ALSO like me, the thought of spending around $4.99 for a single serving of this delicious treat actually hurts your soul. Recently, I’ve been on a cooking kick and figured I’d take a swing at making my own. Needless to say, I was SHOCKED at how simple it was to make! Not only that, but the amount of money you save by making your own is all the more reason to do it. Every time I run out, I HAVE to keep remaking it because it is THAT incredibly delicious!
This recipe makes about 5 servings. While the pudding is delectable enough to enjoy on it’s own, I love to drizzle on some maple syrup and add some chopped up strawberries. Another amazing option, if you’re feeling a little fancy, is to add shredded coconut and some brown sugar broiled grapefruit! Mmm!!!
In regards to the consistency, you could say that this pudding is “thicker than a bowl of oatmeal!” Now personally, I prefer my chia seed pudding to be on the thicker side. However, if you like it a little less “heavy,” you can use 6 tablespoons of chia seeds (vs. a 1/2 cup). But I will say that using a half cup make the pudding set A LOT faster. The “thicker” batch was pretty much set after an hour, while the “lighter” batch needed a few hours to reach a good consistency.
I must admit I had a major fail the first time I tried to make this. I used canned coconut milk from Trader Joe’s and I noticed upon opening it that it had separated. I read that this is a common occurrence with canned coconut milk, but I could not for the life of me get it to recombine. Although, this totally could have been salvaged were it not for my lack of a blender… (I know, I know). BUT in my second attempt, I used Goya brand coconut milk and it was perfect! It was thick and creamy and beautiful! *It should be noted that if you are the proud owner of a blender, you can just disregard this whole spiel!*
Ingredients
- 1/2 cup chia seeds
- 1 can (about 1 1/2 cups) of full fat coconut milk
- 1/4 cup coconut water
- 1 tablespoon honey or agave
- Dash of cinnamon to preference
- 1 teaspoon vanilla extract
Directions:
- Add chia seeds, coconut milk, coconut water, honey, cinnamon, and vanilla extract to a medium size mixing bowl.
- Whisk all the ingredients to combine.
- Once well combined, cover the bowl with a lid or saran wrap and place in fridge to set.
- Allow to chill for an hour or let it set overnight.
- Add some yummy toppings and enjoy!
Totally making this tomorrow. This look so yummy and love that it has chia seeds to keep me and my little one full!
